movies turn out to have long, boring flight sequences, shots that contain so
much visual info that most people can't assimilate it all, etc...

Odd. I would have thought that the more visual info a shot has the more
complex and interesting it would be.
 
And, don't forget: one man's "boring" is another man's "magnificent."
 
My view is that the sci-fi, horror genres are among the most popular. I think
you are basing your observation on too small a sample.
 
Finally, spectacle for its own sake is almost always unsatisfactory.
Spectacle in support of a strong narrative, well-developed characters and a
true cinematic sense can be very exciting.
