Scott Eynan, "The Speed of Sound: Hollywood and the Talkie Revolution, 1926-30"
(Simon & Schuster, 1998), although not directly in your period, provides a very
interesting account of the economic and industrial factors surrounding the
conversion to sound.  It's more journalism than scholarly writing, but
extremely useful nonetheless.
 
As for the '30s itself, Bordwell, Staiger & Thompson would make a useful
starting point (it would certainly be worth investigating their biblioography).
Other possibilities include Colin Shindler, "Hollywood in Crisis" (Routledge,
1996) & Vasey, "The World According to Hollywood" (U. of Exeter Press 1997).
