Alan Rosenthal's WRITING, DIRECTING, AND PRODUCING DOCUMENTARY FILMS
(Southern Illinois U.  Press, 1990) is very much worth looking into.  You
would probably want to select sections of it as it is quite detailed, and at
times complex.  It is not heavy on technical nitty-gritty; that you can find
other places.  Rosenthal's other books (THE NEW DOCUMENTARY IN ACTION, THE
DOCUMENTARY CONCIENCE, and NEW CHALLENGES FOR DOCUMENTARY) have a number of
production-related pieces for which the films are generally available.
Again, it would take some selecting to build a suitable set of materials,
but his stuff is good and I don't know of anything more concise
(unfortunately).
