I'm no expert on Beta, Carol, but I assume her machine has a "video
output" on the back, as well as an "audio output".  If so, just run
cables from them to video and audio inputs on a VHS machine.  As far
as I know, that ought to work.  (Set the VHS machine to "line input"
if it has such a setting.)
 
Alternatively, you could run a coaxial cable (the type your cable TV
and your VCR normally use) from the Beta machine's output to the
VHS machine's input.  Then the Beta's signal should come right on
through on the VHS machine's channel 3 or 4 (depending on how you've
set your VHS machine).
