I did notice that Sasha Torres has a chapter called "Television and race" in Janet Wasko's _A Companion to Television_ (2005), but I'm not sure whether it suits your needs. Here are some possible search strategies for finding other items:
For *books*, try these Library of Congress subject headings:
Television broadcasting--Social aspects
Minorities on television
Minorities in mass media
For *keyword searching* of books, try combining "Television" or "mass media" in the Subject field with:
"Race" or "ethnicity" as a general keyword
"Reader" or "Theory"/"Theories" in the Title field
I would definitely try the last combination in WorldCat and not just in your university's library catalog since some academic libraries have a policy of not collecting textbooks, which might contain such an overview.
For *journal articles*, I would simply try combining keywords such as "race" and "television." They're general enough that they should show up in the article title or abstract. Recommended databases include Ebsco's Film and Television Literature, FIAF, the Social Sciences Citation Index and the Arts & Humanities Citation Index.

I'm currently working on a revision of my TV-studies textbook, *Television:
Critical Methods and Applications* (TVCrit.com), and, at the moment, I'm
trying to update the chapter that surveys critical methods.
I'm having trouble, however, finding a good, up-to-date overview of the
study of race/ethnicity within TV studies. There are plenty of overviews and
anthologies of race/ethnicity in the more general field of cultural studies.
But I've been unable to locate an overview/anthology devoted to
race/ethnicity specifically in TV studies.
Can anyone give me some guidance?
