I can recommend anything by Dr. Peter Utz without hesitation.  His writing is
thorough and rigorous, but manages to slash through a lot of the jargon.
 He's written several books and also writes frequently for A/V VIDEO
Magazine, which is a free subscription to people in the video industry.
 
Utz's VIDEO USER'S HANDBOOK is a good place to start.
